Which is better raw or roasted nuts?

Let’s take a look at what happens when nuts are roasted.

Nuts are commercially roasted in different ways. Oil roasted usually means the nuts are dipped in hot oil. Dry roasting can occur as a single layer of nuts on a conveyor belt through an oven or by rolling them in a small rotating drum like a cement mixer over a flame.

Roasting nuts generally changes some of the nutrients. For example, B vitamins are not heat stable, so their levels are reduced during roasting. But since we get most of our B vitamins from breads and grain products, that’s usually not a problem. Roasting also reduces the water content, thus concentrating minerals such as potassium, magnesium, manganese and copper.

Surprisingly, there are only small differences in the amount and type of fats. Nuts are so dense that unlike potatoes, for example when making chips, even if they are dipped in oil, they cannot absorb much excess oil. Industry members tell me that nuts absorb about 2-5% of the oil in which they are roasted.

Some polyunsaturated fats can be converted to saturated fats when heated, but in nuts this change is only about 10%. Is this clinically relevant because saturated fat can raise blood cholesterol? Probably not – A clinical trial has investigated this.

The cholesterol-lowering effects of roasted pistachios versus raw pistachios were studied by researchers in the United States, and they found that roasted pistachios reduced total and LDL blood cholesterol similarly to raw pistachios.

The important and noteworthy point here is that Iranian pistachios have a very high percentage of fat, and this is a unique advantage for this product because it increases its strength against heat and makes it an ideal option for roasting.
