Based on appearance:

Iranian pistachios are divided into two groups in terms of appearance: hazelnut and almond.

Fandoghi-shaped pistachios
There are two types of Iranian pistachios that are classified in the Fandoghi group:

Fandoghi: It has the most cultivation among Iranian cultivars. Due to the high volume of production, its price is very reasonable. This has made Fandoghi pistachio to become the most exported type of pistachio in Iran.
Kalle ghouchi: It is round in shape, but it is bigger than a hazelnut and its brain size is bigger. The distinctive taste and high amount of unsaturated fat of this type make Pistachio a great choice for a snack.

Almond-shaped Persian pistachio
Almond-shaped pistachios are currently mostly grown in Khorasan, Kerman and Yazd.

There are two types of Iranian pistachios that are classified in the almond-shaped group:

Akbari: It is the longest cultivar of Iranian pistachio and has the darkest skin color. This type of pistachio is the most expensive type of Iranian pistachio because it needs more time and maintenance for full growth.

Ahmad Aghaei: It is bigger than hazelnut pistachio and smaller than Akbari pistachio. Most pistachio farmers prefer Ahmad Aghaei because of its high yield and shorter production time. One of the features that distinguishes Ahmad Aghaei pistachio is the color of its outer shell, which is lighter than other species.

Pistachio kernels
Common pistachio kernels: usually obtained by breaking a closed pistachio shell.
Cal pistachio kernel: obtained from pistachios that have not yet fully grown and are picked much earlier than the tree.
Green pistachio kernels: To get this luxurious nutrient, cal kernels must be peeled under the skin. Pistachio kernel with green skin is known for its fresh green color and unique taste.

Types of Iranian pistachios

Iranian pistachios are divided into four groups in terms of shape and size:

1. Round: This type of pistachio is smaller than other types of Iranian pistachios. The number of round pistachios per kilogram is more than other types due to its small size. Therefore, it is more economical and has the largest volume of exports. The surface color of the core is purple and the skin color is cream.
2. Jumbo: One of the best types of pistachios in Iran is Jumbo pistachio, which is one of the most commercial and economical types of pistachios in Iran. Jumbo pistachio is popular because of its large kernels and good taste. It may look like a round pistachio, but it is generally larger and weighs more, and therefore less per kilogram. Its core is also reddish-gray and its skin is bone-white with medium opacity.
3. Long: This type of pistachio is larger than jumbo pistachio. It is widely used as a luxury nut because of its delicious nut and large size. Due to the length of this type, it is usually used to prepare pistachio slices. Its core color is purple and its bony skin color is very light.
4. Super Long: This type of almond pistachio with a unique taste and texture and is produced only in Iran. It is popular among other varieties due to its highest economic value and is popular in East Asia, Europe and Russia. The surface color of the brain is purple-brown and the skin color of the bone is dark cream.
