Once gathered, they are spread under the sun on a flat concrete platform, locally known as Ashfang, to dry to a moisture level of 12~14%; they are then sent to the cleaning and sorting facilities.

At the facilities, the dried figs are winnowed to remove twigs, leaves and other foreign matters and are fumigated to eliminate the presence of insects and pests. The next step is sorting the figs according to customer requirements.

Since there are no standards specifying Iranian dried figs characteristics, its grading does not follow a specific international or national standard scheme and relies mostly on conventional market wisdom. Three parameters are considered when grading Iranian dried figs:

Size: Iranian dried figs are graded in 3 different sizes based on their diameter. Keeping other variables constant (color, mouth width), the larger the figs, the more expensive they are.

Color: Color is graded on a spectrum from bright yellow (locally considered white) to pale yellow and brown/grey (locally known as “Locky”). Keeping other variables (size, mouth width) constant, the brighter the color, the more expensive the figs are.

Mouth Width: Iranian dried figs are divided into two main categories: Open-Mouth and Closed-Mouth.

Depending on how wide the open-mouth figs are, they are divided into three categories of “S”, “101” and “Parak”.

“S” grade is considered figs with a slightly open mouth.
“101” grade are figs with a completely open mouth. “One in a hundred” as put by the locals.
“Parak” grade are fully blossomed dried figs.
Keeping other variables (size, color) constant, the wider the mouth, the more expensive the figs are.

Since dried figs are mainly hand sorted it is possible for processors to prepare the order by adjusting the percentage of open-mouth/closed-mouth , dark/light, small/large figs thus providing a product that matches the customers’ budget.
